Citrus Cookie

Freah flavours of orange, lemon and lime made this cookie a big hit.

Ingredients

  • 3/4 cup butter
  • 1 1/2 cup sugar
  • 1 egg
  • 2 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • zest of 1 orange
  • zest of 1 lime
  • zest of 1 lemon

Instructions

  1. Preheat oven to 350 degrees F. Line baking sheets with parchment.
  2. Combine all the zests together in one bowl.
  3. Remove about 2 tsp of the zest and mix with 1/2 cup of the sugar. Set aside.
  4. In a mixing bowl cream together remaining 1 cup sugar with butter.
  5. Beat in the egg.
  6. In a seperate bowl combine the flour, baking powder and baking soda.
  7. Beat the dry ingredients into the butter mixture.
  8. Roll dough into 1" balls. Roll the balls of dough in the sugar/zest. Place on prepared pans and using a glass gently press flat.
  9. Bake for 8-10 minutes or until just beginning to brown. Let cool on wire rack.
