Using real vanilla beans to flavour the sugar for these cookies are a great treat. Store the left over sugar in an airtight container and safe for sprinkling on desserts, toast or in your coffee for a burst of vanilla.
Ingredients
- 1/2 cup butter
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 egg
- 2 tbsp milk
- 2 tsp vanilla extract
- 2 cups flour
- 1 tsp baking powder
- 2 vanilla beans
- 1/2 cup sugar
Instructions
- Preheat oven to 350 degrees F. Line baking sheets with parchment paper.
- Cream together the butter and sugars. Beat in the egg, milk and vanilla.
- In a separate bowl combine the flour and baking powder.
- Carefully combine the wet and dry ingredients.
- In a shallow bowl place the 1/2 cup sugar. Scrape the vanilla seeds from each bean pod and using your fingers mix into the sugar.
- Roll the dough into 1" sized balls. Roll each in the vanilla sugar and place on prepared pans. Using a fork press down the dough.
- Bake until just turning brown 8-10 minutes. Let cool on wire rack.
