Thumbprint Cookies

The great thing about these cookies is you can completely personalize them to your taste.  Here I used strawberry and blueberry jam.  You can use your own favorite fruit preserve or even fill them with chocolate or nuts or even coconut.

Ingredients

  • 1 cup butter, room temp
  • 1/2 cup sugar
  • 2 eggs yolks
  • 1 tsp vanilla
  • pinch of salt
  • 2 cups flour
  • filling, I used strawberry and blueberry jam

Instructions

  1. Preheat oven to 350 degrees F. Line cookie sheets with parchment paper.
  2. In a large bowl cream together the butter and sugar.
  3. Add the egg yolks and vanilla.
  4. In a separate bowl mix together the salt and flour.
  5. Combine the flour mixture and the butter mixture until soft dough form.
  6. Roll dough into 1 inch balls.
  7. Using your thumb press down into the center of the ball creating a well.
  8. Fill each well with your filling.
  9. Bake for 12-15 minutes or until firm. Let cool on cookie sheet for a few minutes before place on rack to cook completely.
