Fruit Salsa with Cinnamon Chips

This is a wonderful change for any party. Serve it either as a sweet appetizer or a light dessert.  The fruit salsa would also be great over a slice of angel food or pound cake.

Ingredients

  • Pita bread
  • 1 tbsp cinnamon
  • 1 cup sugar
  • cooking spray
  • 1 pint raspberries
  • 1 pint blueberries
  • 1 mango, cubed
  • 1 cup strawberries, chopped
  • 1/2 cup sugar, or more for taste.
  • 1/4 cup apricot jam

Instructions

  1. Preheat oven to 400 degrees F. Line cookie sheets with parchment paper.
  2. In a small bowl combine the 1 cup sugar and cinnamon.
  3. Spray the pitas with cooking spray and sprinkle with the cinnamon sugar.
  4. Cut into small pieces and place on cookie sheet. Bake in oven 5 minutes or until toasted.
  5. In a large bowl add the raspberries and gently mash.
  6. Add the blueberries, mango and strawberries.
  7. Add the sugar and jam. Stir it all together and give it a taste. Add more sugar if you think it needs to be sweeter.
  8. Serve with cinnamon chips.

Salsa Chicken

I love meal where you can put everything you need in one pot and forget about it.  These ingredients need little help in making a boring chicken breast into something incredible.

Salsa Chicken

Ingredients

  • 1 lb boneless skinless chicken breast
  • 1 can low fat cream of chicken soup
  • 1 cup salsa
  • 1 pkg taco seasoning
  • 1 cup fat free sour cream

Instructions

  1. Spread the soup on the bottom of the cooker.
  2. Add 1/2 the salsa.
  3. Add the chicken.
  4. Top with remaining salsa then sprinkle with the seasoning mix.
  5. Cook on low for 6 hours.
  6. Carefully shred the chicken into small pieces, then stir in the sour cream.
  7. Serve with green onion and diced tomato sprinkled on top.

Spread the soup on the bottom of the cooker and top with 1/2 the salsa.

Layer on the chicken and then top that with the remaining salsa.

Sprinkle everything with the taco seasoning.

Cook on low for 6 hours then carefully shred the chicken into small pieces.

Add the sour cream and stir to combine.

Serve with a sprinkle of green onions and diced tomatoes.

Mango Salsa

Ingredients

  • 2 mangos, cubed
  • 2 green onions, thinly sliced
  • 2 tbsp red onion, finely chopped
  • 1 Thai chili, finely chopped
  • 3 tbsp parsley, chopped roughly
  • 2 limes, juiced
  • Salt and pepper to taste.

Instructions

  1. Combine all ingredients in a bowl and add alt and pepper to taste. Chill for 20 minutes before serving.

To cube a mango:

Slice the mango in three pieces.

Score the flesh of the mango in both direction to make cubes.

Invert the peel so you have a hedgehog appearance.

Cut the pieces away from the peel. Place in bowl.

Thinly slice the green onions. I like to add a bit of the green leave of the onion anytime I cook with it.

Finely chop the red onion.

Seed and then finely chop the pepper. Remember to wear latex gloves when working with hot peppers. They can burn the skin. Do not get in eyes!!!

Coarsely chop the parsley.

Squeeze the juice out of 2 limes. The best way to get the most juice is to first roll the fruit firmly across the cutting board. (That’s my hand.)

Then slice in half.

Now squeeze each half with all your might turning it in your hand 90 degrees each squeeze.  See the power!!!

Combine all ingredients in a bowl and add salt and pepper to taste.
