Eggnog Cookies

When I was making my list (and checking it twice) of cookies I wanted to make for my weekly feature I made sure that around this time of year my choices would seem appropriate.  So I jotted down flavors that would remind me of the holiday season; peppermint, ginger, cinnamon, nutmeg.

I think I finally decided on creating an eggnog cookie partly because it went with Christmas theme but mostly because it would finally force me to try eggnog.  While I consider myself a bonafide foodie I do have some odd aversions.  Like I’ll only eat green grapes.  I’m red ones are fantastic but only green are in my home.  I also am fairly new to cheesecake.  Those two words don’t quite explain what you taste when biting into a moist and delicious creamy cheesecake.  To me it was two words cake (yum) and cheese (gouda? cheddar? brie? gruyere? yum by themselves but yuck as a cake).  Yes I know that’s not the cheese being referred but it still took me a long time to get past that.

The same goes for eggnog.  I get it! A creamy beverage that is elevated when spiked with booze and sprinkled with nutmeg.  But egg-nog? (I see visions of sunny side ups with a rasher of bacon).

But I wouldn’t have the foodie friends that I do if I wasn’t willing to try everything at least once.  To help ease myself in I picked up both chocolate and vanilla flavors.  I figured the chocolate would turn out to be just like chocolate milk.

My final verdict.  These cookies are great! (Eggnog not so much)

Eggnog Cookies-7

I made both two batches of these cookies using each flavor of eggnog.

Ingredients

  • 2 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp nutmeg plus extra for sprinkling on top of cookies
  • 3/4 cup butter
  • 1 1/4 cup white sugar
  • 2 eggs
  • 1/2 tsp vanilla
  • 2/3 cup eggnog, any flavour

Instructions

  1. Preheat oven to 350 degrees F. Line baking sheets with parchment paper.

  3. In a large bowl cream the butter.

  6. Bake 6- 8 or until bottoms begin to brown. Remove from oven.

Toffee Pecan Cookies

Walnuts can be substituted if you prefer their flavour over pecans.  Or you can leave the nuts out completely and increase the toffee bits by another 1/2 cup.

Ingredients

  • 1 cup butter
  • 1 cup white sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 1/4 cup flour
  • 1/2 tsp baking powder
  • 1/2 cup pecans
  • 1/2 cup toffee bits

Instructions

  1. Preheat oven to 350 degrees F. Line baking sheets with pachment paper.
  2. Cream together the butter and sugar.
  3. Beat in the egg and vanilla.
  4. In a separate bowl mix together the flour and baking powder.
  5. Carefully mix in the flour to the butter mixture.
  6. Fold in the pecans and toffee bits.
  7. Scoop the dough by tablespoonfuls and roll into ball. Place on prepared pans and press down flat with bottom of a glass.
  8. Bake in preheated oven 6-8 minutes or until bottom begins to brown. Cool completely on wire racks.

Cardamon Cookies

These are perfect along side a cup of chai or steeped tea.

Yields 3-4 dozen

Ingredients

  • 1 cup butter
  • 2/3 cup powder sugar
  • 1/2 tsp vanilla
  • 2 1/2 cups flour
  • 1 tsp baking powder
  • 1 1/2 tsp ground cardamon

Instructions

  1. Beat together the butter and sugar. Mix in the vanilla.
  2. In a separate bowl combine the flour, baking powder and cardamon.
  3. Carefully add the flour mixture to the butter mixture until ball of dough forms.
  4. Wrap dough in plastic wrap and place in fridge for an hour.
  5. Preheat oven to 350 degrees F and line baking sheets with parchment paper.
  6. Remove dough from fridge and working with 1/3 of the dough at a time roll on to 1/4" thick. Cut out shapes using your favorite cookie cutter and place on prepared pans. Repeat with remaining dough. You can gather up scraps and re roll up to 2 more times before the dough gets over worked.
  7. Bake in preheated oven until beginning to brown 8-10 minutes. Let cool on wire racks.

Vanilla Bean Cookies

Using real vanilla beans to flavour the sugar for these cookies are a great treat.  Store the left over sugar in an airtight container and safe for sprinkling on desserts, toast or in your coffee for a burst of vanilla.

  • 1/2 cup butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 2 tbsp milk
  • 2 tsp vanilla extract
  • 2 cups flour
  • 1 tsp baking powder
  • 2 vanilla beans
  • 1/2 cup sugar

Instructions

  1. Preheat oven to 350 degrees F. Line baking sheets with parchment paper.
  2. Cream together the butter and sugars. Beat in the egg, milk and vanilla.
  3. In a separate bowl combine the flour and baking powder.
  4. Carefully combine the wet and dry ingredients.
  5. In a shallow bowl place the 1/2 cup sugar. Scrape the vanilla seeds from each bean pod and using your fingers mix into the sugar.
  6. Roll the dough into 1" sized balls. Roll each in the vanilla sugar and place on prepared pans. Using a fork press down the dough.
  7. Bake until just turning brown 8-10 minutes. Let cool on wire rack.

Grapefruit Cookies

Adding the zest of the grapefruit to a bowl of sugar and sprinkling  it on top of these chewy cookies makes for a delicious treat.

  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 brown sugar, packed
  • 1 egg
  • zest and juice of 1 grapefruit
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 cup sugar for topping

Instructions

  1. Preheat oven to 350 degrees F and line baking sheets wth parchment.
  2. In a large mixing bowl cream together the butter and sugars. Beat in egg, juice and 1/2 of the zest.
  3. In a separate bowl combine the flour and baking powder.
  4. Carefully mix together the dry and wet ingredients.
  5. In a shallow bowl combine the remaining 1/2 of the zest and 1/2 cup sugar.
  6. Roll the dough into 1" sized balls and place on prepared pans.
  7. Using your thumb press down the dough creating little indentations in the top of the dough. Fill the hole with grapefruit zest sugar.
  8. Bake until just beginning to brown 8-10 minutes. Let cool on wire racks.

Homemade Oreo Cookies

These are a bit labour intensive but total worth it in the end.

  • 1 cup butter
  • 1 cup white sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 cups flour
  • 3/4 cup cocoa
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 cup butter
  • 2 tbsp milk
  • 1 tbsp vanilla
  • 3 cups powdered sugar

Instructions

  1. Preheat oven to 350 degrees F. Line baking sheets with parchment paper.
  2. In a mixing both combine the 1 cup butter and sugar.
  3. Beat in the egg and vanilla.
  4. In a seperate bowl combine the flour, cocoa, baking powder and salt.
  5. Slowly mix the dry ingredients into the wet until soft dough is formed.
  6. Seperate the dough into thirds.
  7. Starting with one of the balls of dough, roll it out on a floured surface until 1/4" thick. Using any shape cookie cutter, cut out cookies and place on prepared pans. Gather of scraps of dough and roll out again.
  8. Continue rolling all the dough and cutting out cookies until dough is gone.
  9. Bake in preheat oven 8-10 minutes or until just beginning to crack. Let cool on wire rack.
  10. Meanwhile in mixing bowl beat together remaining ingredients.
  11. Once cookies are cool pipe filling one half the cookies and top with the other half.

Seperate the dough into thirds.Starting with one of the balls of dough, roll it out on a floured surface until 1/4″ thick. Using any shape cookie cutter, cut out cookies and place on prepared pans. Gather of scraps of dough and roll out again.

Continue rolling all the dough and cutting out cookies until dough is gone.

Bake in preheat oven 8-10 minutes or until just beginning to crack.  Let cool on wire rack.

Lime Shortbread

Lemon always seems to be the citrus king.  Maybe orange gives it a run for it’s money but lemon is still where it’s at in baking.  So of course I had to do something completely different.

  • 1 cup butter, room temp
  • 1 cup sugar
  • 3 cups flour
  • 2 tsp vanilla
  • 1 tsp baking powder
  • 1/2 tsp salt
  • zest of one lime
  • juice of 2 limes

Instructions

  1. Preheat oven to 350 degrees F. Line baking sheets with parchment.
  2. In a large bowl cream together the butter and sugar.
  3. Add the vanilla, baking powder, salt, zest and lime juice.
  4. Slowly add the flour until combined.
  5. Roll the dough into 1" balls and carefully press down with a fork.
  6. Bake in preheated oven for 10-12 minutes or until bottoms begin to brown. Let cool on wire racks.

Add the vanilla, baking powder, salt, zest and lime juice.

Hazelnut Banana Cookie

The dough to this cookie is very soft thus producing a cookie with a muffin top like texture.

  2. In a large bowl combine the flour, sugar, baking soda and salt.
  3. Cut in the butter
  4. Beat in the banana and egg.
  5. Fold in the oats.
  6. Take a dollop of the hazelnut spread and drop in onto the batter. Using a knife carefully "cut" it through the dough.

  8. Bake for 8-10 minutes or until cookies begin to brown. Let cool on wire racks.

Cut in the butter.

Beat in the banana and egg.

Fold in the oats.

Take a dollop of the hazelnut spread and drop in onto the batter. Using a knife carefully “cut” it through the dough.

Peanut Butter and Chocolate Chip Pretzel Cookie

Once again I’ve added something salty to a sweet cookie.  I like using the peanut butter chips so the peanut butter taste is only in bites and not throughout the cookie. This way you get many different bursts of flavor as you enjoy these.

Freah flavours of orange, lemon and lime made this cookie a big hit.

  • 1 1/2 tsp baking powder

  2. Combine all the zests together in one bowl.
  3. Remove about 2 tsp of the zest and mix with 1/2 cup of the sugar. Set aside.
  4. In a mixing bowl cream together remaining 1 cup sugar with butter.
  5. Beat in the egg.
  6. In a seperate bowl combine the flour, baking powder and baking soda.
  7. Beat the dry ingredients into the butter mixture.
  8. Roll dough into 1" balls. Roll the balls of dough in the sugar/zest. Place on prepared pans and using a glass gently press flat.
  9. Bake for 8-10 minutes or until just beginning to brown. Let cool on wire rack.

Remove about 2 tsp of the zest and mix with 1/2 cup of the sugar. Set aside.

Peanut Butter and Apple Cookies

  6. Roll the dough into 1 inch balls and press down gently with a fork.
  7. Bake for 10-12 minutes or until bottoms begin to brown. Let cool on wire racks.

  6. In another bowl combine the cinnamon and the 4 tbsp of sugar.

Salted Caramel Chocolate Cookie

These cookies combine the wonderful taste of salt, chocolate and caramel.

  • 1 bag mini chocolate covered caramels
  • sea salt

  1. Preheat oven to 370 degrees F. Line cookie sheets with parchment paper.
  2. In a large bowl cream together the butter and both sugars.
  3. Add the egg and vanilla.
  4. Mix in the flour, cocoa and baking soda.
  5. Roll the dough into a 1" ball. Flatten the cookie and place a caramel in the center of the dough. Fold the dough around the caramel and then give it a roll between your palms to seal it into a ball.
  6. Place dough on the prepared pans and bake for 8-10 minutes or until cookie begins to crack on top. Let cool on wire rack.

In a large bowl cream together the butter, both sugars,  the egg and vanilla.

Mix in the flour, cocoa and baking soda.

Roll the dough into a 1″ ball.

Flatten the cookie and place a caramel in the center of the dough.

Fold the dough around the caramel and then give it a roll between your palms to seal it into a ball. Flatten it slightly.

Place dough on the prepared pans, sprinkle with some sea salt and bake for 8-10 minutes or until cookie begins to crack on top. Let cool on wire rack.

Triple Chocolate Cookies with Pretzels

The is a chocolate bar that you can only get in the United States called Take 5.  It is an amazing combination of nuts, chocolate, pretzels and caramel. It’s out of this world and when ever I am in the US I always stock up.  This cookie that I found from mountainmamacooks.com comes really close to duplicating the flavors.

  3. Beat in the eggs one at a time.
  4. In a separate bowl combine the flour, cocoa, baking soda and salt.
  5. Add the flour mixture to the sugar mixture.
  6. Fold in the chocolate chips.

Preheat oven to 375 degrees F. Line cookie sheets with parchment paper.
In a large mixing bowl beat together the butter and two sugars.

Beat in the eggs one at a time.

In a separate bowl combine the flour, cocoa, baking soda and salt.

 

Add the flour mixture to the sugar mixture.

Fold in the chocolate chips.
