Snickerdoodle Muffins

Ever since my 52 cookie project I have been obsessed with anything snickerdoodle.  Which just really means anything coated, topped or rolled in cinnamon sugar.  These muffins are a perfect example.  Plus they make your house smell amazing.

Ingredients

  • 1 cup butter
  • 1/2 cup cream cheese
  • 1 cup buttermilk
  • 2 tsp vanilla
  • 2 eggs
  • 3/4 cup sugar
  • 2 1/4 cup flour
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 3/4 tsp cream of tartar
  • 1/2 tsp nutmeg
  • 1/2 cup sugar
  • 1/2 tbsp cinnamon

Instructions

  1. Preheat oven to 350 degree F. Place liners in muffin pan.
  2. In a large mixing bowl cream together the butter and cream cheese.
  3. Beat in the buttermilk, vanilla, eggs and sugar.
  4. In a separate bowl combine the flour, baking soda, baking powder, cream of tartar and nutmeg.
  5. Add the flour mixture to the first bowl of ingredients and mix until combined.
  6. In a separate bowl combine the sugar and cinnamon.
  7. Fill the liner 1/3 full of batter. Sprinkle with 1 tbsp of cinnamon sugar.
  8. Top with remaining batter until liners are 2/3 full. Sprinkle with another tablespoonful of cinnamon sugar.
  9. Bake for 20-25 minutes or until tester inserted in center of muffin comes out clean. Cool on wire racks.
