Russian Tea Cookie

The dough for this cookie comes together really fast.  The most time involved is during the icing stage.

Russian Tea Cookie

This cookie is also known as a Mexican Wedding cookie.

Ingredients

  • 1 cup butter, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla
  • 2 1/4 cup flour
  • 3/4 cup chopped walnuts
  • 1/4 tsp salt
  • Powdered sugar for coating

Instructions

  1. Preheat oven to 400 degrees F. Line cookie sheets with parchment paper.
  2. In a large bowl mix together butter, powdered sugar and vanilla.
  3. Stir in flour, salt and nuts.
  4. Roll dough into 1" balls. Place on prepared pans.
  5. Bake 8-10 minutes or until just slightly going brown. You will be able to tell when the cookie is cooked when the top just starts to crack.
  6. Place on a wire rack to let cool for several minutes.
  7. Place more powdered sugar in a wide bowl. While the cookies are still warm roll in sugar and return to rack.
  8. Once cookies are completely cool roll again in the powdered sugar.
