Red Velvet Cookie

Red velvet is increasing popular in cakes and cupcakes.  Which is odd since it is really just chocolate with red food colouring.  That being said I jumped on the trend train and make a cookie version.

Ingredients

  • 1/2 cup butter
  • 1 cup white sugar
  • 1 egg
  • 1 1/2 tsp vanilla
  • 1 tsp red food colouring
  • 1 1/2 cup flour
  • 3 tbsp cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup white chocolate chips

Instructions

  1. Preheat oven to 350 degrees F. Line baking sheets with parchment.
  2. In a large bowl cream together butter and sugar.
  3. Beat in egg, vanilla and food colouring.
  4. In a seperate bowl combine the flour, cocoa, baking powder, baking soda and salt.
  5. Slowly add the dry ingredient to the butter mixture.
  6. Fold in the white chocolate chips.
  7. Drop dough by tablespoonfuls onto prepared pans and bake in preheated oven 8-10 minutes or until set.
  8. Let cool on wire racks.

    • I am a little cookie monster. I'm doing a year of cookies, one a week and trust me it's getting hard to keep coming up with new ideas. Though I have some pretty awesome ones coming up.
