  • 8 1/2 ounce can sliced pineapple
  • 3 tbsp + 1/4 cup butter
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup flour
  • 1 1/4 tsp baking powder
  • 1/4 tsp salt


  1. Melt the 3 tbsp of butter and mix with brown sugar. Sprinkle over the bottom of a 9” baking dish.
  2. Arrange pineapple slices in the bottom of the pan reserving the syrup. Add water to remaining syrup to make 1/2 cup.
  3. In a bowl cream together the butter and sugar. Add egg and vanilla. Beat until fluffy.
  4. Add the remaining ingredients plus 1/2 cup reserved pineapple syrup. Beat until all is well mixed.
  5. Bake in preheated 350 degree F oven for 40 to 45 minutes. Cool for 5 minutes in the pan then invert the cake on to a plate.
