Peanut Butter and Jam Muffins

I remember going through this phase as a child of maybe 7 or 8 of eating the oddest thing for lunch. I don’t know how it got started, or what possessed me to even enjoy it but every day I would have my mom make me a relish sandwich. Chewy, glutenous white bread spread with sweet pickle relish. Gross yes but I loved them.
Until one day I spilled my orange soda on it and took a bite anyways. While a plan old relish sandwich didn’t bother me, once it had a hint of orange pop I was done. Never to eat another again.
Ahhh the things I did as a child.

Peanut Butter and Jam Muffins

  • 2/3 cup peanut butter
  • 3 tbsp butter
  • 1 cup milk
  • 2 eggs
  • 2 cups flour
  • 1/4 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • Strawberry Jam


  1. Preheat oven to 325 degrees F. Place liner in muffin tin.
  2. In a large bowl cream together the peanut butter and butter.
  3. Beat in the eggs and milk.
  4. Mix in the flour, sugar, baking powder and salt.
  5. Fill each muffin liner 1/3 full with batter.
  6. Add a teaspoonful size dollop of jam in center of batter.
  7. Top with remaining batter, filling liners approximately 2/3 full.
  8. Bake for 15-20 minutes until tester inserted in center of the the muffin comes out clean. Cool on wire racks.
