  • 60 maraschino cherries
  • 3 tbsp butter, softened
  • 3 tbsp corn syrup
  • 2 cups sifted confectioners' sugar
  • 1 lb chocolate


  1. Drain cherries and set on paper towels to dry.
  2. In a medium bowl mix together butter and corn syrup until smooth. Stir in the sugar and mix to form a dough. Chill the dough if it seems to soft.
  3. Wrap each cherry with 1 tsp dough. Chill again to keep it firm.
  4. Melt the chocolate in saucepan over low heat.
  5. Holding by the stem dip each cherry into the chocolate and place on waxed paper sheets.
  6. Store in cool place for up to 2 weeks.

Drain the cherries and let dry on some paper towels. They are easier to work with with they are almost completely dry.

In a medium bowl mix together the butter and corn syrup.

Add the sugar.

Mix into a ball of dough. You will want to place this dough in the refrigerator to let it get cold. The warmer the dough the sticker it gets to work with.

Now to make the cherries place a tsp worth of dough in your hand and shape it into a ball.

Flatten it out into a disc.

Place a cherry in to centre of the disc.

Wrap the dough around the cherry making sure it is well sealed. You’ll want to put these on a waxed paper lined cookie sheet and back in the fridge to cool down again.

In a bowl set over boiling water melt your chocolate.  I like using dark chocolate for this recipe since it is a great contrast to the sweetness of the cherry and sugars.

Drop a cherry into the chocolate.

Make sure it is completely coated before retrieving it with a fork.  Shake the fork gently to remove any excess chocolate.

Place on a waxed paper lined cookie sheet to dry and repeat with remaining cherries.  These can be stored in to refrigerator for up to 2 weeks.  Happy dipping!!!
