Lime Shortbread

Lemon always seems to be the citrus king.  Maybe orange gives it a run for it’s money but lemon is still where it’s at in baking.  So of course I had to do something completely different.

Ingredients

  • 1 cup butter, room temp
  • 1 cup sugar
  • 3 cups flour
  • 2 tsp vanilla
  • 1 tsp baking powder
  • 1/2 tsp salt
  • zest of one lime
  • juice of 2 limes

Instructions

  1. Preheat oven to 350 degrees F. Line baking sheets with parchment.
  2. In a large bowl cream together the butter and sugar.
  3. Add the vanilla, baking powder, salt, zest and lime juice.
  4. Slowly add the flour until combined.
  5. Roll the dough into 1" balls and carefully press down with a fork.
  6. Bake in preheated oven for 10-12 minutes or until bottoms begin to brown. Let cool on wire racks.

Slowly add the flour until combined. The dough will be very crumbly.

Roll the dough into 1″ balls and carefully press down with a fork.

Bake in preheated oven for 10-12 minutes or until bottoms begin to brown. Let cool on wire racks.
