Lime and Coconut Torte

Don't let the color throw you. This dense citrusy cake tastes just like summer.

  • 1 lb. softened cream cheese
  • 3 oz. softened butter
  • 1 cup sugar
  • 2 tsp. vanilla
  • 1/2 tsp. salt
  • 2 eggs
  • 1/2 cup coconut
  • 1 1/2 cup flour
  • 1/2 cup lime jello powder


  1. Preheat oven to 325 degrees F.
  2. Beat cream cheese and butter together until smooth and creamy. Add the sugar, vanilla and salt and mix thoroughly. Mix in the eggs.
  3. Add the two flours and mix until well incorporated. Mix in the jello powder.
  4. Butter a 9-inch cake pan and pour in batter.
  5. Bake for up to 45 minutes or until toothpick comes out clean.

Preheat the oven and prepare the cake pan.

Combine the butter and cream cheese in a bowl.

Beat together until smooth.

Add the sugar and vanilla, then the eggs.

Beat until creamy.

Mix in the flour.

Add the lime jello powder then the coconut.

Stir everything together well.

Spread the batter into your pan.

Bake for 45-50 minutes until set.  Let cool before slicing.

Given how close today is to St. Patrick’s this just might be the perfect dessert.
