Lemon Squares

All great bars should start with a graham cracker crust.  Anything you put on top is just “icing”.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 3 large eggs
  • 3/4 cup sugar
  • 1/3 cup fresh lemon juice
  • 3 tbsp flour
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 4 tbsp powdered sugar.

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a small bowl combine the melted butter graham cracker crumb.
  3. Press the mixture into the bottom of a 8" square baking pan.
  4. In another bowl beat the eggs.
  5. Add the sugar and mix well.
  6. Add the lemon juice.
  7. Finally add the flour, baking powder and salt. Mix everything together well.
  8. Pour the filling over your graham cracker crust.
  9. Bake in your preheated oven for 20-25 minutes or until set.
  10. Once cooled sprinkle the lemon bars with powdered sugar and cut into squares.
