Lemon Chip Poppy Seed Cookies

There other day when I was at the local bulk food store stocking up on chocolate chips I came across these lemon chips.  I knew I would be making a lemon cookie down the road and thought what a great burst of flavour these could offer.  It was a good decision.

Lemon Chip Poppy Seed Cookies

Ingredients

  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp poppy seeds
  • 1/2 cup butter
  • 3/4 cup sugar
  • 1 egg
  • 1 1/2 tsp vanilla
  • juice and zest of 1 lemon
  • 1 cup lemon chips

Instructions

  1. Preheat oven to 350 degrees F. Line baking sheets with parchment.
  2. In a large bowl combine the flour, baking powder, salt and poppy seeds.
  3. In a mixing bowl and cream together the butter and sugar.
  4. Beat in the egg, vanilla, zest and lemon juice.
  5. Mix in the flour mixture until combined.
  6. Fold in the lemon chips.
  7. Roll dough into 1 inch balls. Place on prepared pans and press flat.
  8. Bake 10-12 minutes or until bottoms begins to brown.
  9. Let cool on wire rack.
