Garlic Crashed Potatoes

I’ve adapted this recipe from one of my favorite bloggers The Pioneer Woman.  Here I’ve added garlic to give it a flavour boost.

Garlic Crashed Potatoes

Ingredients

  • 1 lb baby potatoes
  • 3 tbsp olive oil
  • salt, pepper and garlic powder.

Instructions

  1. In a large saucepan over high heat bring the potatoes to a boil in salted water. Cook until they are fork tender. Drain.
  2. Preheat oven to 425 degrees F. Line a baking sheet with foil.
  3. Place a potato onto the prepared pan and using a potato masher or a fork partially mash it.
  4. You want it to still stay together. Repeat with each potato.
  5. Drizzle each potato with olive oil and sprinkle with salt, pepper and garlic powder.
  6. Bake in preheated oven until golden about 15-20 minutes.
