Peanut Butter Cookies

Peanut Butter Cookies

This recipe is a very sticky dough so you need to give yourself time to refrigerate the dough for at least one hour before baking.

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 large egg
  • 1/2 teaspoon vanilla
  • 1 1/4 cups all purpose flour
  • granulated sugar


  1. Preheat oven to 375 degrees F.1. In a large mixing bowl, beat together the butter and peanut butter on high speed for 30 seconds.
  2. Add the sugar, brown sugar, baking soda and baking powder.
  3. Mix until combined, scraping down the sides of the bowl as needed.
  4. Beat in the egg and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in the remaining flour.
  5. Cover the dough and chill for about 1 hour in the refrigerator.
  6. Shape the dough into 1-inch balls and then roll them in the granulated sugar.
  7. Place balls 2 inches apart on an ungreased cookie sheet and flatten with a fork to make a crisscross pattern on the cookies.
  8. Bake in a 375 degree oven until bottoms are lightly brown about 7 to 9 minutes.

In a large mixing bowl add the peanut butter and butter.

Beat together for at least 30 seconds or until blended and smooth.

Add the two sugars, baking soda and baking powder.

Mix them together until combined, scraping down the sides of the bowl as you go.

Beat in the vanilla and egg.

Gradually add the flour 1/4 cup at a time and blend together using the mixer until it gets to hard to mix. Stir in the any remaining flour by hand.

Refrigerate dough covered for at least one hour.

When ready to make cookies preheat the oven to 375 degrees F.  Pour some sugar onto a plate.

Shape dough into a 1 inch sized ball and place in sugar.

Roll the dough in the sugar until covered and then place on a ungreased cookie sheet.  Continue with the rest of the dough, placing the balls 2 inches apart.

Using a fork gently press down on the ball of dough.

Going the opposite direction press down again to create the crisscross pattern you see here.

Bake the cookies in your oven until lightly browned about 8 minutes.  Transfer to wire rack to cool.

Another way to finish these cookies is to omit the sugar rolling and instead press mini chocolate chips into the top of the ball of dough.

As these bake they will melt down giving you a wonderful little chocolate center.
