Grapefruit Cookies

Adding the zest of the grapefruit to a bowl of sugar and sprinkling  it on top of these chewy cookies makes for a delicious treat.

  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 brown sugar, packed
  • 1 egg
  • zest and juice of 1 grapefruit
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 cup sugar for topping


  1. Preheat oven to 350 degrees F and line baking sheets wth parchment.
  2. In a large mixing bowl cream together the butter and sugars. Beat in egg, juice and 1/2 of the zest.
  3. In a separate bowl combine the flour and baking powder.
  4. Carefully mix together the dry and wet ingredients.
  5. In a shallow bowl combine the remaining 1/2 of the zest and 1/2 cup sugar.
  6. Roll the dough into 1" sized balls and place on prepared pans.
  7. Using your thumb press down the dough creating little indentations in the top of the dough. Fill the hole with grapefruit zest sugar.
  8. Bake until just beginning to brown 8-10 minutes. Let cool on wire racks.
