Fruit Salsa with Cinnamon Chips

This is a wonderful change for any party. Serve it either as a sweet appetizer or a light dessert.  The fruit salsa would also be great over a slice of angel food or pound cake.

Ingredients

  • Pita bread
  • 1 tbsp cinnamon
  • 1 cup sugar
  • cooking spray
  • 1 pint raspberries
  • 1 pint blueberries
  • 1 mango, cubed
  • 1 cup strawberries, chopped
  • 1/2 cup sugar, or more for taste.
  • 1/4 cup apricot jam

Instructions

  1. Preheat oven to 400 degrees F. Line cookie sheets with parchment paper.
  2. In a small bowl combine the 1 cup sugar and cinnamon.
  3. Spray the pitas with cooking spray and sprinkle with the cinnamon sugar.
  4. Cut into small pieces and place on cookie sheet. Bake in oven 5 minutes or until toasted.
  5. In a large bowl add the raspberries and gently mash.
  6. Add the blueberries, mango and strawberries.
  7. Add the sugar and jam. Stir it all together and give it a taste. Add more sugar if you think it needs to be sweeter.
  8. Serve with cinnamon chips.
