Cornbread Muffins

This recipe can also be made in a 8″ inch square pan and cut into squares.  Another great trick is to poke small holes in the top just as it has come out of the oven and drizzle honey over top. Yum!

Ingredients

  • 1 cup cornmeal
  • 1 cup flour
  • 1 1/2 tbsp baking powder
  • 3/4 cup sugar
  • 1 tsp salt
  • 1 1/2 cup milk
  • 2 eggs, beaten
  • 1/4 cup butter, melted

Instructions

  1. Preheat oven to 450 degrees F. Line a muffin tin with wrappers.
  2. In a large mixing bowl combine the first five ingredients. Mix together well.
  3. In a seperate bowl combine the milk, eggs and butter.
  4. Pour the liquid ingredients into the dry making sure everything is incorporated.
  5. Divide the batter evenly over the 16 muffin wrappers.
  6. Bake in your preheated oven for 15-20 minutes or until golden.
