Colcannon

This is a traditional Irish potato side dish. It can be made up to 2 hours ahead of time and baked when needed.

Ingredients

  • 1 1/2 pounds potatoes, peeled and quartered
  • 1 savoy cabbage. shredded
  • 1 leek, pale green and white parts only, diced
  • 1 cup 1% milk
  • 4 tbsp butter
  • 1/4 tsp nutmeg

Instructions

  1. Preheat broiler. In a large saucepan with salted water over high heat boil potatoes until soft. Remove from heat, drain and mash.
  2. In another saucepan combine the cabbage, leek, milk and nutmeg. Cook covered until cabbage is soft about 15 minutes.
  3. Stir in the potatoes.
  4. Spread the potato mixture into the bottom of a 8" casserole dish.
  5. Drizzle with melted butter.
  6. Place under broiler until lightly browned on top, 5 minutes.
