Chai Cookies

Okay so I bake a lot of cookies.  But to be one hundred percent honest….please don’t judge me….I don’t particularly like cookies myself.  I am a self proclaimed salty/savory/bready/cheesy addict. ( Not sure if there is a group for that). Any hoo…sweets are really not my thing.  But let me tell you I think I ate the first dozen of these cookies. (Again please don’t judge).  My DH says he only eats certain kinds of cookies; chocolate chip but he ate the next dozen.  These are absolutely amazing!  And they are perfect with a cup of java.  That is if you can wait long enough for it to brew.

Ingredients

  • 2 3/4 cup flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 1/2 tsp cinnamon
  • 1 tsp ground ginger
  • 1 tsp cardamon
  • 1/2 tsp allspice
  • 1/4 tsp black pepper
  • 1 cup butter
  • 1 3/4 cup white sugar
  • 2 eggs

Instructions

  1. Preheat oven to 350 degrees F. Line cookie sheets with parchment.
  2. In a small combine the sugar, cinnamon, ginger, cardamon, allspice and pepper. Remove 1/4 cup of the mixture to separate shallow bowl.
  3. In a large bowl combine the flour, baking soda, baking powder and salt.
  4. In a mixing bowl cream together the 1 1/2 cup of sugar mixture with the butter.
  5. Beat in the eggs.
  6. Carefully add the flour and mix until just combined.
  7. Roll the dough into a 1 inch size ball. Roll it in the reserved sugar.
  8. Place the dough on your prepared cookie sheets and flatten with the bottom of a glass.
  9. Bake in the preheated oven for 8-10 or until just beginning to brown. Let cool on wire rack.
