Blueberry Crumb Bars

I think blueberries are my all time fruit to bake with.  They are so versatile and just bursting with flavour.  One of my favorite things for breakfast is to take blueberries, fresh or frozen and heat them in the microwave for about 1 1/2 minutes.  Then I stir in some vanilla yogurt. Perfect!

Ingredients

  • 1 cup white sugar
  • 1 tsp baking powder
  • 3 cups flour
  • 1 cup butter, cold
  • 1 egg, beaten
  • 1/4 tsp salt
  • 4 cups frozen or fresh blueberries
  • 1/2 cup sugar
  • 4 tsp cornstarch

Instructions

  1. Preheat oven to 375 degrees F. Grease a 9 x 13 pan.
  2. In a large bowl combine the sugar, baking powder, salt and flour.
  3. Cut the butter into small cubes and add to the bowl.
  4. Using a pastry blender or two knifes, cut the butter into the flour until the mixture resembles coarse crumbs.
  5. Add the beaten egg.
  6. Spread 2/3 of the dough in the bottom of your pan.
  7. Press in down under a crust is formed.
  8. In another bowl combine the cornstarch and flour.
  9. Add the blueberries and mix until everything is coated.
  10. Pour the blueberries on top of your dough.
  11. Spread the remaining dough mixture evenly over the top of the blueberries.
  12. Bake in preheated oven until the top is slightly browned 40-45 minutes. Let cool before cutting into squares.
