Blueberry Bars

This is similar to my recipe for blueberry crumb bars.  In this recipe however the blueberry filling creates a even moister, denser bar.  And who says you can have too many blueberry recipes.

Ingredients

  • 1 1/2 cup flour
  • 3/4 cup sugar
  • 1/8 tsp salt
  • 3/4 cup butter, chilled and cubed
  • 2 eggs
  • 1 cup sugar
  • 1/2 cup sour cream
  • 3/8 cup flour
  • 1/2 tsp almond extract
  • 16 oz. fresh blueberries

Instructions

  1. Preheat oven to 350 degrees F and grease a 8 x 8 baking pan.
  2. In a large bowl combine the flour, salt and sugar.
  3. Add the butter.
  4. Using a pastry cutter or two knives cut the butter into the flour mixture until the dough resembles coarse crumbs.
  5. Reserve 1 1/2 cups of the mixture and pour the remaining into the bottom of your prepared pan.
  6. Press the dough into the bottom of your pan.
  7. In another bowl whisk together the beaten eggs, sugar, sour cream and flour.
  8. Fold in the blueberries until just combined.
  9. Spread the blueberries evenly over the top of the crust in your pan.
  10. Sprinkle the remaining dough over the top of the blueberries.
  11. Bake for 45-55 minutes or until golden. Let cool before cutting into squares.
