Aromatic Rice with Peas

This a highly aromatic and flavourful Indian dish. Feel free to use brown rice.

Ingredients

  • 1 onion, 1 half sliced and other half diced
  • 2 tbsp butter
  • 1 clove garlic, minced
  • 4 cardamon pods
  • 1 cinnamon stick
  • 4 whole cloves
  • 1 bay leaf
  • 2 cups basmati rice
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1 cup frozen peas
  • 1/3 cup slivered almonds, toasted

Instructions

  1. In a large saucepan over med-high heat heat 1 tbsp of the butter, the diced onion and the garlic. Cook until softened 3 minutes.
  2. Add the cardamon, cinnamon, cloves and bay leaves. Cook until fragrant.
  3. Stir in the rice. Cook 1 minute.
  4. Add 2 cups cold water, 1/2 tsp salt and the pepper. Bring to a boil. Reduce heat, cover and simmer until rice is tender and liquid has evaporated.
  5. Remove from heat and add peas. Let stand, covered 10 minutes.
  6. In a skillet over med-high heat remaining butter with sliced onion and almonds. Cook until golden 6 minutes.
  7. Fluff with fork and remove cinnamon stick cardamon pods, cloves and bay leaves.
  8. Toss almond mixture into rice.
