It is that time of year again. It’s apple season.  And it’s a bumper crop. Orchards coming off a horrible season the previous year have apple bursting off there trees ready for baking, snacking and cooking.  Here is my contribution to the apple recipe world.

And it all starts with the apples.  Choose any variety you want.  Here I used macintosh.  I ate about three while making these.  Chop them nice and fine.

And your spices.

And then the piece de resistance.  Toffee bits.  Yummy!  All your addition should be based on your taste buds and how sweet you want you turnovers. Taste often.

Create your pastry using your favorite recipe.  Roll out the dough and cut into 3-4″ circles.

Brush the edges with egg white and place a couple tablespoonfuls of the apples in the center.

Fold over the edges and press firmly together with a  fork.

Brush the top with more egg white and sprinkle with cinnamon sugar.

Apple Toffee Turnovers

Ingredients

  • 6-8 small apples, peeled and chopped small
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 tbsp cinnamon
  • 1 tbsp nutmeg
  • 1 cup toffee bits
  • pastry
  • egg white, beaten
  • cinnamon sugar

Instructions

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment.
  2. In a large bowl combine the apples, sugars, spices and toffee.
  3. Roll out pastry and cut into 3-4" circles.
  4. Brush edges with egg whites. Place 2 tbsp filling in center of dough.
  5. Fold over edges and seal with fork.
  6. Brush top with egg white and sprinkle with cinnamon sugar.
  7. Bake for 30-40 minutes until brown.
