Waffles

Today is National Waffle Day and National Oyster Day.

Here is a simple batter to use in your waffle maker. Add fruit, nuts and chocolate if you wish. But butter and syrup work just as great on top of these plain ones.

Waffles

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 4 tsp baking powder
  • 2 tbsp sugar
  • 2 eggs
  • 1 1/2 cups warm milk
  • 1/3 cup butter, melted
  • 1 tsp vanilla extract
  • 1. Preheat your waffle iron.
    2. In a large bowl mix together the flour, salt, baking powder and sugar.
    3. In another bowl beat the eggs.
    4. Add the milk, butter and vanilla to the eggs.
    5. Pour the liquid into the flour mixture and beat until blended.
    6. Ladle the batter into the waffle iron and cook until crisp and golden.

    Crepes Suzette

    Today is National Crepes Suzette Day.

    Crepes Suzette

  • 1 1/2 cups all-purpose flour, sifted
  • 1 1/2 cups milk
  • 2 eggs
  • 1 tsp vanilla
  • 5 tbsp melted butter, cooled
  • 1/4 cup granulated sugar
  • 1 tbsp grated orange zest
  • 1 1/2 cups fresh orange juice
  • 1/4 cup Grand Marnier
  • 1 cup orange segments
  • 2 tbsp cognac
  • 1. Whisk together the flour, milk, eggs, vanilla and 2 tbsp melted butter until smooth.
    2. Heat a little oil in no stick skillet. Pour in about 1/3 cup of batter and rotate skillet so it coats the bottom. Fry until brown on bottom and dry on top.
    3. Flip crepe and cook 30 seconds longer. Transfer to plate and keep warm. Continue with remaining batter.
    4. Fold crepes in half then half agian to make triangle.
    5. In a large skillet add remaing 3 tbsp butter. Ass the sugar and orange zest and cook until caramleized.
    6. Pour in the juice and simmer until slightly reduced 3 mintues.
    7. Add the Grand Marnier, orange segments and crepes and coat.
    8. IAdd the cognac and flamble.

    Oatmeal Nut Waffles

    Today is National Oatmeal Nut Waffle Day.

  • 2 eggs
  • 1 1/2 cups all purpose flour
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil
  • 1 tbsp white sugar
  • 4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp vanilla
  • 1/2 cup oatmeal
  • 1/2 cup walnuts
  • 1. Beat eggs in bowl until fluffy.
    2. Mix in remaining ingredients.
    3. Heat waffle iron. Spray with non stick cooking spray then pour mix on the hot iron.
    4. Cook until golden brown. Serve with whip cream ,fruit or syrup.

    Blueberry Pancakes

    Today is National Blueberry Pancake Day.

    Here is the recipe for homemade pancakes i posted a while back. Just add a cup of thawed blueberries to the batter. You can add anything you want to this batter to create different pancake flavours.

    Cinnamon French Toast

    Today is National French Toast Day.

    Here’s a perfect Sunday morning breakfast treat.

    Cinnamon French Toast

  • 1 egg
  • 2 egg whites
  • 1/4 cup milk
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • Dash nutmeg
  • 8 slices bread, cut in half

    1. In a wide bowl, whisk egg and egg white until foamy. Whisk in milk, vanilla, cinnamon, and nutmeg.
    2. Heat butter in heavy skillet over medium-low heat. Dip 4 slices of bread in the egg mixture, turning to coat thoroughly. Let excess drip back into bowl.
    3. Place coated bread slices in hot skillet. Cook, turning, until both sides are nicely browned, about 2 minutes each side.
    4. Transfer to a plate and keep warm in oven. Repeat with remaining bread and egg mixture. Serve with maple syrup.

  • Pancakes

    Today is National Pancake Day.

    Prepackaged mixes make cooking a batch of pancakes for the family quick and easy.  But with a couple extra minutes you can whip up a batch from scratch.  Give it a try!

    Pancakes from Scratch Recipe

    4 servings

  • 2 cups all-purpose flour
  • 2 1/2 tsp. baking powder
  • 3 tbsp sugar
  • 1/2 tsp salt
  • 2 large eggs
  • 1 1/2- 1 3/4 cup milk
  • 2 tbsp butter
  • 1. In bowl combine flour, baking powder, sugar and salt.

    2. In separate bowl add eggs and 1 1/2 cups milk. Whisk together.

    3. Add liquids to dry ingredients. Stir until smooth.

    4. Melt butter. Blend into batter. If batter is too thick add more milk.

    5. Heat up greased skillet. Drop 1/4 cup of batter on hot pan. Cook until bubbling and edges slightly dry. Flip and cook other side.

    6. Place on plate and keep warm while making the rest of the pancakes. Serve with butter, syrup and anything else you enjoy on your pancakes.
