Trail Mix

Today is National Trail Mix Day.

You can make your own trail mix using any combinations of cereal, nuts, dried fruit and chocolate candies.

Trail Mix

  • 1/2 cup banana chips
  • 1/2 cup raisins
  • 1/2 cup dry roasted peanuts
  • 1/2 cup plain M&Ms
  • 1 cup dried apricots halved
  • 1/2 cup almonds
  • 1. Mix all ingredients together and place in snack size bags.

    Homemade Tortillas

    Today is National Tortilla Chip Day.

    It’s not hard at all to make your own tortilla chips at home.

    Spray some soft tortillas with cooking spray and bake in a 350 degree F oven until crispy 8-10 minutes. Cut to the size you want.

    Sprinkle them with different spices like chili powder and chipotle to get more flavour.

    For something a little sweeter, sprinkle them with cinnamon sugar and serve with a fruit salsa.

    Garlic Dill Pickles

    Today is National Guacamole Day and National Pickle Day.

    Here is a great guacamole recipe.

    And if you want to feel quakerish then try these.

    Garlic Dill Pickles

  • 8-10 small pickling cucumbers
  • 2 cups white vinegar
  • 2 cups water
  • 2 tablespoons pickling salt
  • 4 heads fresh dill or 4 teaspoons dill seeds
  • 4 small cloves garlic

    1. Cut a thin slice from the ends of each cucumber

    2. Meanwhile, combine vinegar, water, and salt in a saucepan and bring to a boil.

    3. Follow the directions for the type of cans you will be using.

    4. Place 1 head fresh dill or 1 tsp dill seeds and 1 clove garlic into each jar; pack in cucumbers. Pour boiling vinegar mixture over cucumbers to within 1/2 inch of rim . Process 10 minutes for pint jars and 15 minutes for quart jars.

  • Bittersweet Chocolate Almond Bark

    Today is National Bittersweet Chocolate with Almonds Day.

    Bittersweet chocolate has less sugar and more chocolate liqueur than semisweet chocolate but can be interchanged in recipes depending on your preference.  You can change the chocolates and nuts in this recipe and make a variety of barks.

    Chocolate Almond Bark

  • 2 cups bittersweet chocolate
  • 2 cups whole almonds
  • 1. Melt chocolate.
    2. Stir in almonds. Spread on buttered cookie sheet. Let cool. Break into pieces.

    Spiced Nuts

    Today is National Nut Day.

    Here’s a great snack that I bet you can’t just stop at one handful.

    You need:

  • 4 cups of mixed nuts
  • 1 x egg white
  • 1 heaping tbsp of grainy mustard
  • 2 tbsp of sugar
  • 1/2 tsp of cayenne
  • Salt
  • I like to use a mixture of cashews, almonds, pecan, filberts and brazil nuts but you can use any nuts you prefer.

    Spiced Nuts (6)

    In a bowl lightly whisk one egg yolk.

    Take a heaping tablespoonful of mustard

    And mix it with the egg.

    Add the sugar, salt and cayenne.  Mix together well.

    Add the nuts and toss well to thoroughly coat them.

    Spread nuts on a foil lined baking sheet.

    Spiced Nuts

    Toast in preheated 350 degree F oven for 15-20 minutes until the nuts start to brown. Let cool and enjoy.

    Spiced Nuts Full Recipe

  • 4 cups of mixed nuts
  • 1 x egg white
  • 1 heaping tbsp of grainy mustard
  • 2 tbsp of sugar
  • 1/2 tsp of cayenne
  • Salt
  • 1. Preheat oven to 350 degrees.
    2. Lightly whisk egg white and add mustard, sugar, cayenne and salt to taste.
    3. Add nuts and toss well to cover.
    4. Spread out onto a baking sheet.
    5. Bake for 15 minutes, or until nuts are lightly browned.
